Ito is an omakase-style Japanese restaurant, led by Michelin Star chef Masa Ito and Kevin Kim, in partnership with VCR Group.

Our cuisine is meant to heighten one’s senses through a thoughtful culinary experience. Set in lower Manhattan and designed with a modern Japanese approach, our 16-seat omakase counter will be a special destination for any occasion.

Chef Bios

Masa

Originally from Hokkaido, Japan, Chef/ Owner Masashi Ito grew up encompassed by fresh local seafood at his Grandfather’s sushi restaurant. Masa was inspired by his Grandfather’s passion to make every meal special using fish in “shun”, which in Japanese, is the idea of enjoying seasonal food at its peak flavor. Masa’s culinary education consisted of first hand experience; cooking inside kitchens around Orange County, CA then becoming a sushi chef at the age of 19. With Masa’s passion and dedication, he was headhunted to become the Chef for Sushi Zo Downtown Los Angeles in 2012 where his inventive interpretation on traditional sushi highlights seasonal fish from Japan in the form of omakase. Masa made the move to NYC as the Chef for Sushi Zo’s third location in 2016 and ended up falling in love with the city. He quickly gained popularity and received the honor of a Michelin Star during his first year. Ito is Masa’s dream since childhood coming true as he always wanted to open his own restaurant.

Kevin

Chef/Owner Kevin Kim was born and raised in Orange County, California. Being from California, Kevin found a love for local seafood at a very early age. At the age of 19 he decided to start his career in sushi, honing his craft with seafood sourced from Japan while working with renowned restaurants in his region. In 2016 Chef Kevin was hired by Sushi Zo to become the Chef of their downtown Los Angeles location. Being immersed in an omakase setting allowed Kevin to showcase his passion for creating memorable experiences with food. After being at the helm of Sushi Zo downtown Los Angeles for 3 years, Chef Kevin was invited to join the Sushi Zo in New York, which had been awarded 1 Michelin star. Soon after arriving in NYC, he became enthralled with the energy of the city and was thrilled to be working in one of the most competitive culinary destinations in the world.
